Egg Bake Meal Prep Recipe

I love to make this on Sunday night and have for breakfast all week for my family, healthy, easy to heat up - grab and go #keto #ketobreakfast #mealprep #ketomealprep



Ingredients

10 eggs

1 cup sour cream

2 cups mushrooms

2 cups spinach

1 cup feta cheese

1 lb ground pork sausage (or meat of choice)

1 cup shredded mozzarella


Instructions

  • Preheat oven to 375 degrees

  • Brown ground sausage in a saucepan until thoroughly cooked

  • Spray a 9x13 baking dish with olive oil cooking spray

  • After the sausage is cooked add to the bottom of your sprayed baking dish, and in the same saucepan cook your mushrooms until they are done and add in the spinach to cook down.

  • Add the mushroom and spinach mixture on top of the sausage in your baking dish and top with feta cheese

  • Beat 10 eggs in a mixing bowl and add 1 cup sour cream and mix

  • Add in your spices to the egg mixture (I use garlic salt and pepper, but you can use anything or nothing at all)

  • Pour the egg mixture on top of the ingredients that are already in your baking dish and top with shredded mozzarella cheese

  • Bake at 375 for 20-30 minutes or until the eggs pass the toothpick test
